Training Content Overview

Module 1 – Food Safety Modernization Act (FSMA) Overview

This training module is an introduction and discussion on the Food Safety Modernization Act (FSMA) which has been rolled out in 7 Rules. One rule in particular is the Sanitary Transportation of Human and Animal Food (STF). The Food Safety Modernization Act is by far the biggest overhaul of the food safety system since the first national law was passed over a century ago. FSMA has mandated a shift to prevention and to establishing a modern food safety system that is based on preventing issues before they happen instead of reacting to problems. This module will address who this new Act is affecting, who it applies to, timeline of the roll out, compliance dates and how the key requirements will impact the transportation Industry.

Module 2 – Food Safety for the Transportation Industry

This training module provides awareness of potential food safety issues that could occur during transportation operations. It will also review basic sanitary transportation practices to help employees address food safety issues if they arise. This video will offer learners a closer look at the HACCP system, hazards and microorganisms. Safe food handling and transportation rest on having the right facts, skills and programs in place, therefore, this video module explains the three main topics in keeping food safe – Personal Health and Hygiene, Product Placement and Temperature Control and Conveyance Cleaning and Sanitation.

Module 3 – Good Transportation Practices for the Sanitary Transport of Food

This training module will examine the Good Transportation Practices (GTPs) that will assist in controlling the chances of introducing any food safety hazards to food, either through the work environment or operational practices. Here at Iron Apple we have broken down the GTPs into five elements:

  • Sanitation & Pest control
  • Transportation
  • Equipment
  • Recall & Traceability
  • Personnel

The GTPs are the core to having a solid Food Safety foundation and therefore, this video module breaks down and thoroughly explains each of the five elements.

Module 4 – Sanitary Transport Driver Training

This module is specifically tailored to drivers for the safe handling of food during transport. We go into more detail in the areas that drivers see on a day to day basis, such as loading / unloading, temperature readings, maintenance and hygiene.
